Hello, sorry if this seems super basic stuff but this is my first project. I want to build myself an industrial style lamp and I would like to use these to switch it on and off

Do these have some kind of relay built in so when I hit on it stays on? Or would I need to add some kind of relay?

No, those are just push buttons, one is normally open (green) and the other is normally closed (red). They are used to switch a remote contactor which you will need to add, probably in a separate enclosure.
What wattage and lamp type are you looking to control?
